Nonna's Spaghetti and Meatballs

Italians don't just eat a meal, they celebrate it! It typically consists of an abundance of good food, good wine and great conversation!

I remember many Sunday lunches with the family that usually included spaghetti and meatballs.



Here are the ingredients you will need:

 Progresso Italian Style Bread Crumbs
 2 large eggs
Heinz Tomato Ketchup, about 1/4 cup
Spaghetti, 16 oz
Ground Pork, 1 lb or 1/2 lb ground pork +1/2 lb ground veal
Lean Ground Beef, 1 lb
Fresh Garlic cloves
Extra Virgin Olive Oil
Oregano
Fresh Organic Basil
 3 Pomi Strained Tomatoes, 26 oz.
Salt
Pepper
Red chili flakes

Start with the meatballs:

With a fork, Mix 2 eggs, salt, pepper, ketchup, oregano and some breadcrumbs in a medium bowl
Add meat
Use your hands to mix this together
Add more bread crumbs if the mixture is too wet or doesn't stick together without it being too dry; add more ketchup if it feels too dry
Take about a heaping tablespoon size of mixture and roll into balls ( or as big as you like)

Sauce:

In a large sauce pan, add olive oil and 2 or 3 cloves of garlic
Brown the garlic slightly
Remove the pot from the heat and let it cool a bit before adding the strained/crushed/puréed tomatoes
Add tomatoes
Add fresh basil
Sprinkle some dried oregano leaves
Red pepper flakes
Black pepper and a bit of salt
Add a fresh carrot and onion, if you have handy
Add meatballs
Let this boil
Then turn down the heat and simmer for about 2 hours stirring regularly

Spaghetti:


Boil a pot of water for the pasta and cook till al dente

Remove meatballs and serve separately
Add sauce to spaghetti
Add Parmesan cheese (the good parmigiano)

Enjoy with a nice glass of red wine and green salad!
